Meal prep Monday: Right out of the crock pot
Meal prep does not have to be boring or take a lot of time. Seriously. I decided to have one of my main dishes come right out of the crock pot. The other meals are also easy with little clean up as well.
Meal prep and a balanced diet are very doable. It may take a little planning to achieve your goals. I look at what is on sale for the coming week and then plan accordingly for the following week. It also helps to follow a few social media accounts for inspiration.

Crock pot meal for the week
The main dish is Saucy Orange-Barbecue Chicken with vegetables.
I love how it’s sweet with a little sense of heat from the sweet chili sauce. It’s super simple with just browning the meat. I use my cast iron skillet to help leave some grill marks. Afterwards, I just drop it in the crock pot on low for 6 hours.
The sauce is simple. I tweaked a few ingredients to lower the sugar content. While it is not a huge factor for me right now, I am still trying to keep it within arms reach.
My coach told me to live a little. So, I am by enjoying foods of all kinds in this building and improvement season. I remember what it took for me to get to where I was and I don’t want to struggle as hard to beat that for the 2018 season.
Let’s not forget, baked sweet potatoes. Bonus, I can add a little bit of brown sugar too. I can eat sweet potatoes every day. Don’t you? Baked? Mashed? Fried? I’m not picky. Just give ’em to me.
Taco salad is on tap too. I could eat taco salad often. I prefer using lean ground turkey over ground beef. I switch things up in my salads including homemade salsa and guacamole on some days. This week it is salsa. Well, at least for one of my clients. Right now I am having some dental issues so it’s soft babyish food for me.
I believe in balance when it comes to food. It tastes good and it’s colorful. Oh, and it’s basically good for you too. Isn’t that the best combination that there is when it comes to food?
