I decided to make this banana bread in a mini loaf pan. This means you’ll be able to enjoy a single serving of banana bread without having to cut slices.
These cute mini bread loaves are a great way to use up that last bit of Kodiak mix in the box. Kids like them, and the mini loaf size is already portion controlled.
The cinnamon oat power cakes make a perfect substitute for all purpose flour. Not only is the cake mix made out of whole-wheat flour, which helps you get fiber into your diet, it contains 14 grams of protein per serving.
As far as the sweetness goes, which is something that gives banana bread life, this still has it.
Instead of using a full cup of brown sugar, you can use stevia or Swerve brown sugar alternative. It is a low-calorie and low carb alternative.

Overripe bananas: Brown, overripe bananas are sweeter and easier to mash.
Kodiak Cakes mix: Your choice of flavor. I prefer cinnamon oat.
Egg whites
Cinnamon and nutmeg spices
Stevia or Swerve brown sugar alternative

Like nuts? Add pecans or walnuts
Swap the cinnamon and nutmeg for a pinch of pumpkin pie spice.
How to make this Kodiak cakes banana bread recipe
Preheat the oven to 350 Fahrenheit. Mash the banana in a medium bowl.
Add egg whites to the mashed bananas and mix.
Slowly add the dry ingredients starting with the cake mix.
Add the cinnamon, nutmeg and sugar.
Take the bread pan and grease it using cooking spray.
Pour the banana bread batter into your greased pan.
Top with nuts of choice. I added pecans on top.
Bake for 25-30 minutes. Check the center of the loaf for doneness.
Let the bread cool and then enjoy.
