Kodiak cakes protein banana bread recipe

Making banana bread year round is pretty simple. It only requires a few ingredients along with a couple of overripened bananas. However, it is a tasty treat filled with a bit of sugar. But that doesn’t mean you can’t tweak the recipe and make it a little healthier by using a few substitutes like Kodiak cakes mix.

I decided to make this banana bread in a mini loaf pan. This means you’ll be able to enjoy a single serving of banana bread without having to cut slices.

These cute mini bread loaves are a great way to use up that last bit of Kodiak mix in the box. Kids like them, and the mini loaf size is already portion controlled.

The cinnamon oat power cakes make a perfect substitute for all purpose flour. Not only is the cake mix made out of whole-wheat flour, which helps you get fiber into your diet, it contains 14 grams of protein per serving.

As far as the sweetness goes, which is something that gives banana bread life, this still has it.

Instead of using a full cup of brown sugar, you can use stevia or Swerve brown sugar alternative. It is a low-calorie and low carb alternative.

Ingredients

Overripe bananas: Brown, overripe bananas are sweeter and easier to mash.

Kodiak Cakes mix: Your choice of flavor. I prefer cinnamon oat.

Egg whites

Cinnamon and nutmeg spices

Stevia or Swerve brown sugar alternative

Substitutions and additions

Like nuts? Add pecans or walnuts

Swap the cinnamon and nutmeg for a pinch of pumpkin pie spice.

Why use overripe bananas?

According to Greatist.com, overripe bananas are an alternative to butter and oils in baking. If you’d like to cut back on saturated fat, try replacing half the butter in a baking recipe with mashed banana.
