Bacon  Spinach Quiche

Cook bacon

Cook bacon in a large skillet until lightly crisp. Chop or crumble bacon.

Spinach

Chop up fresh spinach.  Or you can defrost frozen spinach and remove water.

Egg filling

In a large bowl whisk together: eggs, salt, pepper and thyme. Stir in half and half.

Put it together

Layer the bacon, spinach and cheese in the shell.  Then pour the egg mixture on top.

Bake

Bake for 45-50 minutes or until a knife in the center comes out clean and the top is starting to brown.

Serve it up

Allow the quiche to sit for 15 minutes before serving.
