Low-carb stuffed zucchini boats

Use fresh zucchini for base

Slice zucchini in half and then scoop out zucchini flesh.  Par boil boats and set aside.

Chop vegetables

Chop zucchini flesh into chunks. Chop bell peppers to add to stuffing.

Prepare stuffing

Brown ground turkey and add chopped vegetables. Add seasonings to taste.

Fill boats and bake

Add stuffing mixture to zucchini boats. Bake at 350 degrees F for 30 minutes and cheese is melted.
