Copycat Panera Orange Cranberry Muffins

A perfect recipe for fresh or frozen cranberries that are great for breakfast or a snack.  Whip them up and get them out the oven in 20 minutes.

Let’s get started!

Cream butter

Use a hand mixer or stand mixer to cream the softened butter.

Mix wet ingredients

Mix the eggs, Greek yogurt and vanilla extract into the creamed butter.

Orange zest

Zest an orange and fold into the mixture.

Combine wet and dry ingredients

Slowly add the dry ingredients into the wet mixture.

Add cranberries

Fold the fresh cranberries into the muffin batter before filling muffin tin.

Bake and cool

Bake muffins in 350F oven for about 20 minutes and cool on wire rack.
