How many different things can I try and eat during this part of my off season? Let me count the ways. Well, I really can’t count them but I am enjoying them.
For months and months during prep, I ate eggs and oatmeal for meal 1 of 6. It didn’t bother me much because I was able to add blueberries for a while or I turned it into protein waffles. There were times I even got fancy and switched it up for Ezekiel bread french toast. But in the end, I came back to what was tried and true…oatmeal and egg whites.However, those days are a little behind me. At least for now they are sort of behind me. My diet has a little flexibility. I have added a few different things to keep it interesting while meeting what is a part of my meal plan.
Savory muffins, or savory buffins, as they called them.
So when I saw a savory muffin recipe from 6 Pack Fitness I knew I had to give it a try. I thought this would be a great way to easily pop in my first meal of the day.
Mix oat flour with other dry ingredients. I used Applegate Chicken Sausage instead of the turkey bacon the recipe calls for. This sausage has saved me this year when it comes breakfast.
In a large bowl mix oat flour and all the dry ingredients.
I started with adding the salt, baking powder and grated cheddar cheese.
I opted for Applegate Chicken Sausage
The diced bell pepper and spinach before mixing the wet ingredients to the dry mix.
Bake in oven for about 20 minutes and wah lah!
I definitely like these and could do them for a few days. I will be making at least one change when I make them again to help with the “savoriness” of each muffin. I’ll place sausage in each cupcake tin instead of the mix because there is no guarantee you will get sausage in each other otherwise.
